To My Beautiful Friends & Another Recipe

Below is a wonderful poem Audrey Hepburn (a woman whom I admired and loved in the movies) wrote when asked to share her 'beauty tips.' It was read at her funeral years later. The words a very inspiring and hold a ton of truth.

For attractive lips, speak words of kindness. For lovely eyes, seek out the good in people. For a slim figure, share your food with the hungry. For beautiful hair, let a child run his/her fingers through it once a day. For poise, walk with the knowledge that you never walk alone. People, even more than things, have to be restored, renewed, revived, reclaimed, and redeemed; never throw out anyone. Remember, if you ever need a helping hand, you will find one at the end of each of your arms. As you grow older, you will discover that you have two hands; one for helping yourself, and the other for helping others.

Here is a great easy fruit salad recipe for the holidays...
You can mix up the fruit combinations too...

Anytime Orange Mandarin Fruit Salad

INGREDIENTS:
24 ounces cottage cheese
1 (12 ounce) container frozen whipped topping, thawed
1 (6 ounce) package orange flavored gelatin mix
2 (11 ounce) cans mandarin oranges, drained
1 (20 ounce) can pineapple chunks, drained
chopped nuts

DIRECTIONS:
1. In a large bowl, combine the cottage cheese, whipped topping and gelatin mix. Stir in the oranges, nuts and pineapple. Sprinkle nuts and arrange a few orange slices on top... Chill in refrigerator.
Serves 6

I've always been a big Audrey Hepburn fan and I remember this poem being read at her funeral...no truer words have ever been spoken! She was such a classy lady through and through.

That fruit salad looks delicious! I make one similar but use vanilla pudding and cool whip instead of cottage cheese because I don't like that stuff! lol

I'm making a sweet ambrosia for the holidays -- and your recipe reminded me of how much I love that fruit/tart/sweet/sour cool taste with the turkey! Thanks for the reminder!

You know when I saw your recipe said the Mandarin Oranges I immediately thought of my father when he was living here with me I would always give him Mandarin oranges and cottage cheese for his lunch desert.
