Kris Kringle Kake & Candied Walnuts....


I wanted to post today but I am not feeling to good this glorious morning... so I am giving you a recipe that I make every holiday... It is kinda like a fruitcake but instead of using the candied fruits with the citron in it I only use the pineapple and cherries... (because that is all I like) I buy them in the red green and yellow to give the cake more color... I hope you enjoy this cake... and for those of you who like the rum... after it is baked before you take it out of the pan pour some rum over it (about 1/2 cup or more) and let it sit for a several hours or days before you eat it...



Kris Kringle Kake
Ingredients:
2 layer size package spice cake mix
1/2 cup boiling water
1/4 cup shortening
2 eggs
3 1/2 cups mixed chopped candied fruit
2 cups broken walnuts
1 cup raisins


Directions:
Combine cake mix, shortening and boiling water in large bowl. Mix till well moistened; let stand 30 minutes; then mix at medium speed on electric mixer for 2 minutes. Add 2 eggs and beat another 2 minutes. Combine candied fruit, walnuts and raisins; stir into cake batter. Pour into greased and paper lined 10 inch tube pan. Bake in slow oven 300�F for about 2 hours and 20 minutes. Cool and remove from pan.

Note: I line the bottom of the tube pan with candied cherries and candied Walnut halves… Recipe below

Sugar-Glazed Walnuts

Ingredients:
1/4 cup (1/4 pound) butter
1 cup brown sugar (packed)
1 teaspoon cinnamon
1 lb. Walnut halves or large pieces (about 4 cups)

Directions:
Quick and easy microwave recipe!
1. In the microwave, melt butter in a 1-1/2 qt. casserole dish (30 seconds to 1 minute at high).
2. Stir in brown sugar and cinnamon. Microwave at high 2 minutes. Mix well to combine butter and sugar.
3. Add nuts and mix to coat. Microwave at high 3 to 5 minutes.
4. Spread out onto wax paper and cool slightly. Serve warm or cold.
Makes 1 pound.


These are good as a plain old snacks too....

I may do it before Christmas for the kids, because we have our traditional Christmas cake that it is against the law to variate from!

(well not really, but it feels that way sometimes)

Oh, I am so glad to get this recipe...I LOVE fruit cake but dislike some of the fruits used..and I LOVE having them rum-soaked. Can't wait to make one of these...
I am still in Thanksgiving mode and will be until the day after...then I jerk that tree down from the attic, grab all those fabulous decorations and LET THE FUN BEGIN.

thanks for coming by Donna! Living in an old house I really do use my old cupboards, that jelly cupboard has been all over my house and lots of different paint colors too! Thats whats so nice about shabby country, you can move furniture from room to room and it always fits in fine! Have a great day! xo
