No Brainer Dinners

Good Morning.... I am taking Rose's at Santamaker's Journey challenge to post 3 No Brainer Meals... Also make sure you visit her blog to see a list of others who participated in this challenge.... I hope you enjoy them...



Southwest Salad



Romaine Lettuce 1 bag
Spinach 1 bag
Cucumber, peeled and cubes (I remove seeds) 1
Red Onion, diced 1
Shredded Mexican Cheese 1 cup or more
Roasted Red Peppers ½ jar
Plum Tomatoes, cubed 2 – 3
Corn, can drained 1 small or ½ large
Black Beans, can 1 small or ½ large
rinsed & patted dry
Chicken, boneless breast cooked and sliced into strips
or prepared chicken for salads

Tortilla strips 1 bag or fry tortillas and slice into strips
Salsa as dressing if desired or
Lighthouse southwest dressing
Sour Cream

Chop all veggies into small cubes, add to romaine & spinach. Add to salad rough chopped roasted red peppers, cheese, corn and black beans… Toss in tortilla strips and serve.



Grandma’s Hamburg & Creamed Corn

1½ lbs ground beef
2 cans creamed corn
1 can whole kernel corn
1 large yellow onion, sliced into strips
Crushed red pepper to taste (a pinch… for a little kick)
Salt & Pepper to taste

Sauté onions until tender then add Hamburg and brown till done. Add remaining ingredients and cook until heated through. Serve with good crusty bread for sopping up juices… and mashed potatoes if you like ;-D








Donna’s Easy Clam Chowder







1 can clams drained & rinsed
3 cans Cream of Potato Soup
2 cans New England Clam Chowder
1 can Cream of Celery Soup
1 can Cream of Onion Soup
1 qt Half & Half Milk
1 cup chopped celery
1 stick butter or more if your a butter freak like me

Sauté celery with butter. Mix all ingredients together. Heat slowly so not to burn it in bottom of pan. Serve with a crusty bread or oyster crackers

Girl I am just loving this No Brainer dinner that Santamake came up with how cool is this?? I am with Chris on this one..I love to open boxes and the micro door to cook..I use to love to cook until I got older..I guess I am just wore out now haha!! ummmm, yummy...these all sound so good and i'll be trying them soon. it has turned pretty cool at night and mornings here in west texas...our days are still in the 70's and would you believe my KNOCKOUT rosebush is still putting on little roses!! Amazing....

It all looks so good, I'll have to try it out. Lately though, I seem to mess up every receipe I try. I agree with Baba's comment...I hate trying to think of what to fix for dinner every night. That salad looks so yummy and I think I have most of the ingredients right now. There's a start for tonights dinner. Thanks, Donna
